Vegan Panna Cotta | No gelatin

Creamy velvety, silky smooth this Panna Cotta will just melt in your mouth. Making this vegan Italian dessert requires little effort and very few ingredients , but delivers a stunning result.

What is Panna Cotta ?

Panna cotta (Italina for “cooked cream”) is an Italian Dessert of sweetened cream thickened with gelatin and molded. The cream may be aromatized with coffee, vanilla, or other flavorings.

Personally I’m not a fan of gelatin for its bad reputation for what goes inside it. So I tired substituting gelatin with agar agar to create this healthy (well this healthy-ish) and vegan version of this dish. You can have Panna Cotta on its own but it’s texture and taste is quite dense .It usually goes well with some fresh sweet and tart fruit syrup or sauce with it.

I will be using mixed berries but once can use any fruit they like.

All you need is few basic ingredients:
Coconut milk, agar agar ,sugar ,vanilla extract ,your favorite fruit or berry for syrup and that’s about it! You are good to go!

Step 1: Bring the mixture to boil
In a sauce pan add milk and sugar and bring it to boil.To this mixture add agar agar and keep it on medium flame for about 4-5 minutes stirring in between to make sure agag agar is completely melted.Once melted completly add vanila essence and combine well.

Step 2: Mold it up:
Pour this mixture in tor ramekins or your favorite bowls and let it chill in fridge for about an hour or so. Your vegan panna cotta is ready.

Step 3: The compote time:
In a sauce pan add your berries and sugar and juice of a small lemon and lil bit of water and let it cook on medium heat for about 10-15 minutes. Your sauce /compote is ready. If you like smooth texture you can run this mixture through blender and strain it to have clear liquid consistency of a sauce.

Step 4: Bone appetite!

Ingredients

  • Panna Cotta
  • Coconut Milk 400 ml

  • Agar Agar 4 gm

  • Sugar 2 Tbsp

  • Vanilla Extract / Essence 1 Tbsp

  • Compote
  • Your favorite fruits/berries

  • Sugar 2 Tbsp

  • A small lemon

Directions

  • In a pan add milk and sugar and bring it to boil.
  • Add vanilla and agar agar to the mixture and put it back on the flame on medium heat and let it sit for 10 mins until agar agar melts completely
  • Pour the mixture in ramekin and let it chill in the fridge for about an hour.
  • In a saucepan add berries, sugar , lemon juice and water and heat it on medium flame for about 15 minutes until mixture comes to boil. Run the mixture through blender for smother consistency.
  • Pour the compote on Panna cotta and it’s ready to eat.

Notes

  • Few variations you can try:
  • Fruit syrup: You can use any of your favorite berries or any other fruit like mango or kiwi the receipe for sauce remains the same.You can skip the fruit syrup and replace it with some good ol chocolate sauce. Nothing can go wrong classic chocolate sauce.
  • Veg Version: Just replace the coconut milk with full fat milk and some cream with 2:1 ratio. And recipe should work just fine.
