Easy yet decadent Brazilian Flan or Caramel Custard Recipe

Brazilian flan / Caramel Custard Pudding

Flan is a European and Latin dessert made up of a caramel topping and custard base that’s made with milk, eggs and sweetener (which may already be included in the milk). It is usually baked in a water bath for the best texture, and after baking it is chilled then later inverted onto a platter.

It’s one of my favorite desserts and the best part about it is it only takes 5 ingredients to make. I’ve cooked it on multiple occasions & it’s as good as heaven on plate. Every time I’ve made a Brazilian flan, it’s always been a sure shot hit!

Brazilian Flan has a rich and creamy texture due to the condensed milk incorporated into it. Pair it with sweet caramel syrup on top and it takes it to the next level! The dessert can go well for with lunch or dinner or any celebratory occasion for that matter. Monica from FRIENDS made a flan for Racheal’s birthday, so it’s a good alternative for a traditional cake, unless you’re Rachael 😛

There are many variations to this recipe that I’ve come across as well as I’ve cooked but I think I’ve managed to find the one that works really well for my taste buds ( not too sweet not too and not too bland) and I sure you’ll like it as well.

Few of the observations of me that work well while making Flan are

  • Always make sure you cover your flan with a foil so that it gets cooked evenly.
  • Make sure the mixture is not lumpy. Give it a stir in the food processor or blender so that the mixture is uniform.
  • Flan comes out really well (visually) in microwave than in a pressure cooker. However it tastes the same either ways you cook.
  • Setting up the caramel is also really important if you stir the sugar too much from the beginning, it might create a lumpy caramel sauce full of sugar crystals. So the best way to go about it is to keep the gas on medium or low and only stir after you see the sugar color change from white to amber.

Ingredients

  • Sweetened condensed milk 1 Can/ 400gm

  • Eggs 3

  • Milk ¾ cup or 180 ml

  • Sugar 100 gm

  • Vanilla extract/essence 1 Tbsp.

Directions

  • Melt the sugar in a heavy saucepan over low heat. Do not stir the sugar at the start. Once the the color of the sugar starts changing to light brown to yellow start stirring until it forms a smooth mixture.
  • Once the mixture is smooth immediately transfer it to 9 inch round mold making sure the sauce is evenly coated evenly over the base. Set aside to cool.
  • Using a blender beat eggs, milk, condensed milk and vanilla together
  • Pour the mixture into mold and cover with aluminum foil.
  • Fill the baking tray with boiling hot water and then place the mold on top. Make sure water level in tray does not go above halfway of the sides of the mold.
  • Pop the tray in oven and bake it for about 45 mins at 175C
  • Alternate method using pressure cooker: Add mold to pressure cooker and fill it with boiled water and pressure cook, without the whistle, for about 20 mins on medium flame.
  • Flan is cooked if knife inserted in the center comes out clean.
  • Allow flan to cool before unmolding.
